Paleo Chocolate Chip Cookies (gluten, nut, dairy and refined sugar free)

Makes 18-20 small cookies or 6-8 large cookies
1 cup sunflower seed butter
1/3 cup raw honey
1 egg whisked
1 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp baking soda
1/2 tsp baking powder
1 pinch of salt
1/2 – 1 cup Enjoy Life Chocolate Chips
Preheat oven to 350 degrees. Mix ingredients (adding chocolate chips after mixing the others together) in a large bowl. Spoon a tablespoon (if making small cookies) or ice cream scooper (if making large cookies) of dough onto either parchment paper or foil placed on a cookie sheet. Press down and flatten dough with with fingers to about a cm thick. Bake for 8-10 min for smaller cookies or 18-20 min for larger cookies. Place on cooking rack and wait a few minutes (if you can!) and enjoy with a glass of cold milk!
Feel free to modify and interchange ingredients to your liking! In place of sunflower butter, you can use any type of nut butter. You can also use cranberries and walnuts in place of chocolate chips! Please share your modifications and how you enjoyed this recipe!
